Had to make a quick run to the grocery storeembefore the Broncos game. The wife had to have my smoked ham so I grabbed some fresh hocks to try curing and smoking.

I will be using Excalibur maple cure
Here are the first batch of hocks goin in the brine.

I will on keep ya about all posted.
 
Never tried that cure but Good Luck!...JJ
 
Ok so here is final product. Oh and in my quest for Maple flavor these were injected with Maple syrup. Cold smoke yesterday 6hrs over Todds Maple pellets let rest until today when hot smoked over Pitmaster pellets at 195 to 210 deg.
