Looks terrific! Just bought my first one today and plan to smoke Tuesday. Scored a 10lb rib roast at $4.98lb, considering boning it before smoking.

Looks like you nailed it. Bear's step by step is the way to go! Congrats on what looks like perfect beef! I like it.

Happy Smoking,

Thanks to each one of you and a dang rookie making the carousel, christmas miracles do happen. I am serious about my thanks to all contributions by the experienced folks sharing their info on here. My mother in law is a great person but she has never bragged on my cooking like she did eating it.

I didn't de bone this one. Took it 127 IT and loose foil in pan covered with towel. about hr later at in laws uncovered then cut bone out that actually pulled out for the most part. And man the bone makes for some good "nawing ".

I kind of chickened out in that I couldn't pull together the crowd for a 10lb prime rib. I carved mine into 5 beautiful ribeyes cut a little over 1.5" thick and a rack of beef ribs. Gonna make 3 dinners out of it. The bone was already cut free on mine and just attached by a flap and some string. 8 lbs of ribeye steak and 2 lbs of beef ribs is an excellent deal for $49.95

*To be accurate, this is select grade beef. I couldn't turn it down at that price and I have a sous vide machine to make it butter.
