I have smoked many racks of ribs over the years but currently the Weber kettle is my only option for cooking/smoking. Went with the "FUSE, SNAKE, RING", or whichever name you prefer, method and had a nice cook with minimal attention while I re-potted and planted some pepper plants. Very nice! I learned how to smoke meat on mine, and have actually been getting the urge to smoke a butt on there again just because it's kinda fun!

You say that like it's a bad thing. I do almost all of my smaller smokes on the kettle(s). If I had to choose between the kettle and my WSM, I would choose the kettle.

BTW your ribs look fantastic.

Im' curious. I've been playing around with Snake method - but using a foil tray with water to stabilize the temp. Have you tried both ways. Any thoughts on it.

I'm not quite sure who your asking, or if your asking in general. So here's my take: I will use a disposable pan to catch the drippings, and the pan will have a small amount of water in it. Not so much for temp. control, but more to prevent a mess from accumulating on the bottom of my kettle.
