You stuck them in the fridge after sealing? Also if you are going to eat them up quickly(I would they look great) why not just stick them in a paper bag in the fridge ?
I think that because they were a bit overcooked that you had started to draw the fat out of the product. The fat that was left was on the surface and was forced out of the product when they were vacuum sealed. Thats' MHO CM
