I have been reading Aaron Franklins new book and it inspired me to try to smoke my first brisket. It's a 6 lb brisket flat. I am smoking on my GMG at 275 degrees. I seasoned it with salt and pepper. I am using a mix of pecan and hickory pellets.

At 2 hours
Brisket hit 165 so I wrapped in foil until it reaches 203 degrees.
First brisket came out amazing it was tender and juicy. Can't wait to make another one.

Looks like it turned out great! What did you use for seasoning and wood? Got any sliced pics?

Brisket is suppose to be difficult to cook, no fair getting good results the first time!
