My first smoke turned out great. I cooked two 8 lb butts for 17 hours at 225 degrees. I foiled them at 155 and had a stall for 2.5 hours at 180. I used pecan wood chucks for flavor and rubbed the pork with mustard before seasoning. Only problem I had was a small grease fire that I caught and put out quickly. I know how to fix that next time. Great info on this site. Thanks for the help.

I'd say you are on the right track and really understand what it takes to make a great end product, as far as temperature, waiting out the storm with cooking time (you can't rush). Also, understanding the "stall" and foiling.
Great job, where you located, would love to help you eat some of that. LOL:D

I live near Greenville SC. The bone did just fall out. I really like cooking with the propane smoker. It was much easier than what I've done in the past with much Better results.
 
Looks like an excellent first smoking experience. I'd eat that anytime.
