Did some ribs today on my new wsm. Temp slowly creeped up and held right around 250 so I didn't try and chase it. 3-2-1 method ended up 3-1 then 2 min on a hot grill. Also had a tray of beans on the bottome shelf. Turned out great I'm sold on the wsm. After my daughter finished her first rib I asked her if she wanted more, she replied, YOU KNOW I DO! Mission accomplished.

Congrats on the great cook! Never used a wsm but have heard awesome things about them. Always a plus when the kiddies want more, good work!

Nice job! You'll love your WSM...looks like you're well on your way. When the kids are happy, the wife is happy, and happy wife, happy life! [emoji]128512[/emoji]

Great job with that first smoke on the WSM.  After a few smokes, the inside won't be so shiny and it will run a little cooler.

I read on here the first few times they run a little hot that's why I didn't try to chase the temp so much. Lots of great info around here

Tasty looking ribs! Nothing wrong with 250* as you found!
