Last week I completed some basic mods to an ECB smoker. Today I did my first smoke. St.Louis style spare ribs using the 3-2-1 method. Very pleased with how it went. For the most part I was able to maintain temps in 225-250 range. Ribs have good flavor. The rub is much saltier than I prefer but it was a store bought rub.

 
Looks great! I have been using Blues Hog rub lately. It isn't salty, in fact I added salt to my ribs the last time I used it. It's real good stuff. I bought it on Amazon when I needed to spend a few more dollars for free shipping. I'm glad I found it.
 
Those look fantastic - that bark looks great.

I've been using a two-stage rub: first goes salt/white pepper.  Meathead over at amazingribs.com calls it "dry-brining" and I'm a firm believer.  Basically, you salt your meat well beforehand, then apply a no-salt rub.

But wow, that texture looks good.
