Here we go! Just got a brisket on the new equipment, first smoke on it. Only two mods I made were to flip the charcoal pan and extended the stack to the grate. So far, the temp is within 5 degrees from end to end. If this holds, I won't have to make any more mods. I think I need to work on the minion method, though. I think I put too many hot coals on top. I will work on that for the next go!

Sorry there was no Q-view, we have to get a new camera. As far as the reusults, it was the best brisket I have ever done. I was using a brinkman electric before and undercooking it. The smoke ring was the best I have ever achieved and the flavor was great. I will be getting a camera soon so I can share! I will be doing a butt next weekend, can't wait!
