First smoke on new Yoder YS640

Did my first smoke on my YS640 on Saturday, last weekend was burn in, seasoning and bacon.

I used TastyLicks BBQ RibRub, it has a little bite on the end.

Set temp to 260* and just let it go, this was more for learning the smoker than anything else.



Although the temperature was in the 60's the wind was killer. 

I threw a welding blanket over the back to cut down on the wind

but two hours into the smoke the wind shifted and came around the front.

Too lazy to move and wanted to see how it did.


After 4 hours


These were on for a little over 6 hours, felt done but were still tough.

I have struggled with spares forever, but have no problem with baby backs.

They look like they would be very tender. I am a fan of foiling. I always do my ribs for 2 hours in foil. I did have a batch go over 6 hours with 2 hours of foiling and they turned out a bit on the tough side. I think sometimes cooking meat is so random, some racks need 7 hours.

Those sure look tasty though!
 
 
Ribs look great.  Think they just needed to cook more.  What temp was your Maverick reading >?

Maverick was reading 15 to 25 degrees higher. At the time I only had the one pit probe in the center. 

Since then I received a second Maverick and will pick up an extra pit probe. This should give me a better idea across the grates.
