First smoke on Cookshack 025 - BB ribs

I have smoked ribs maybe 10 times and have had mostly good luck by my standards using a Weber gas grill and a Brinkman electric water smoker.

I am trying my Cookshack Smokette Elite for my very first time. I thought I would try something I am familiar with for starters.

Light rub using a slightly adapted recipe from the Weber Cola rib recipe. I bought these prior to the Cookshack so I used to have the butcher always cut them in half.

Ready to go in the smoker. My old Brinkman was a fixed temp of around 250 (actually 230 to 270) so I am going to try 250 on the Cookshack. Probably target about 4 hours since they are around 3 pound racks.

Our company liked them as they were almost fall off the bone. I think I went about a half hour too much. Also maybe I went a little too light on the rub since they weren't quite as flavorful as I am used to making. I usually add sauce twice the last half hour and I only did it once this time. That could also have reduced the flavor.

Overall not too bad for a first smoke.
