First RT590 cook

All seasoned up and ready to play.
Scared me a little as it overshot during initial burn and a little erratic for first 15 min or so, then settled in rock solid. Just noticed on the first cook during preheat it overshot 250* setpoints, reached 275*, but 15 minutes in it was back to 250* and rock solid since. Think I just need to be more patient during preheat.

Anyway, doing a pretty basic butt first … just 2parts coarse black pepper and 1 part kosher salt. I want to calibrate myself on what smoke profile to expect at a long 250* smoke, and didn’t want any rubs masking it.

Going to add some baked beans later.

You will love your RT. The controller needs a few cooks to dial in. After that its pretty rock solid except when you open the lid of course.
 
Never cooked on a RT before, but that sounds pretty darn good on temp control. My Yoder 640 will run up over 300 then settle back down and runs solid at any temp but I usually run 250. This gets the pit warmed up and I’m just patient with it. I’m sure you will enjoy that RT.
 
You will enjoy the 590. I always put another Inkbird thermometer inside to verify temps. Set temp and actual vary sometimes by 10-20° . My own piece of mind I guess.

Well, one thing is fur sure, you can't go wrong with a Yoder. As I attempt typing this, I have 36 pounds of bacon smoking on my RT 700. Need the removable extra shelf to get that much on there but it works well. If ever I need to replace it, I'll give a serious look at the Yoder. Sadly I wasn't really up to speed on them when I got my 700 but can't complain. this thing has been bullet proof.

Yeah, it’s like getting the first scratch on a new car. But you get nothing positive out of that.

I guess if OCD enough to keep after it with BKF … not happening!

I waited a few hours to get the exterior layer sterilized so I don’t push bacteria in with the probes. Ow have an Inkbird probe on the grate near the built-in, and both the RT and Inkbird probes in the butt pretty close together.

The Inkbird is reading 3* hotter than RT pit probe, and 6* hotter in the butt. Likely within the error envelope of the combination.

I just bought a RT too. You won’t recognize your smoker after smoking that butt. It will never look that clean again, but that is a good thing. So far I can’t find anything to complain about with mine!

Hardest part is having to wait another 8 hours or so … probably shoulda done a faster cook 😔

I’m not so sure that the RT isn’t the best bang for the buck. There are a lot of things to like about each, but I’m thinking that RT is a very good grill. From what I’ve seen my Yoder runs better as a “pit” than RT but the body is much heavier and thicker, also having my firebox off to the side rather than in the center is a big bonus for hot spots. I also have the option to grill directly over the fire by removing the deflector plate, mine is older and doesn’t have the trap door, but Yoder has paint issues and their customer service is kind of a joke. Where RT is stainless lid and from what I can tell excellent CS. Plus I think RT probably is a better high temp cooker, grilling, baking, than Yoder. There is also a big gap in price.

Conclusion: Though I’ve never cooked on one, it seems to me the RT is a fine cooker. If I ever wear out my Yoder I would give RT a serious look, but that may not happen for a while.
 
What tipped me over the fence was the higher speed auger and can now get to 700* … hopefully good for pizza … can cook 2 good-sized ones at a time … not quite as hot as you may want for Neapolitan, but we shall see.

I think others with this 3rpm auger have gotten there, will see. Meant to try at end of initial burn but forgot.
And yeah, I’d do a complete clean out before attempting.
I may do that next, since I’ve used a pan from scratch with the butt, so no mess anywhere.
Of course, that grease fire would surely get into that Ooni territory 🤪

Looking good, get a cooling rack that will fit your pan and it will hold your meat up out of the fat and let a little more get smoke

My 1250 (with the 3rpm auger) will hit 700 no issues. I do clean the drip pan and grease pot prior to running it to that. It will do flatbread pizza very nicely. Tru Neo....no but good enough!

PS congrats on the new grill! I think you will be enjoying to for a long time!
 
ok, finished up. Stalled in mid 140’s about 6 hours in @ 250*
Thunderstorms threatening, so covered and finished in oven @ 275* to a 205*IT

Great bark and moist/juicy.
VERY light smoke profile, less than I’d like, but wife loved it.
Will try running at a lower temp for a short while as I look for the right balance.
Using RecTeq Competition Blend, so maybe some opportunity there.

Happy wife = happy life! You will have a lot more honey will you smoke this and that.....you have a good future ahead of ya!
