first prime rib...trial run

Have a buddy who is going to make a prime rib for christmas. I said, "do you want to smoke it?" He said "I don't know...do I?" So he got a nice 14 lb choice rib roast no bone. Nice fat cap and not that hard, gristly stuff. Going to whack off about a 3 lb hunk today and do a trial run. So I loaded up the mes in the car and am getting ready to head over for some football and smoking. Going to go about 200* til its 125* internal. Also going to try out jimmy's smoky au jus. Will post pics along the way. Wish me luck!
 

Pics are out of order and there's a shadow on the smoker one but football is starting. Go broncos!

Have my garlic, onions, celery and carrots in a pan ready to catch delicious juices from the meat. Did a simple rub of "steak seasoning" garlic salt and sea salt. Put a little olive oil on the meat to help it stick and scored the fat a little. Going to let the veggies cook for an hour then add some beef broth to get the smoky au jus going. Set the mes to 200* can't wait for that thin blue smoke!
 
Pulled out at 130* 3 hours 20 minutes (just enough time for the broncos to beat cleveland. Looks wonderful.

Pulled the veggies out. They look awesome.

Added to a stock pot with some more beef broth and red wine. Getting up to simmer right now. Can't wait.
