After reading this forum for days, I decided I need to replace my old lil chef electric smoker. I only have smoked salmon and lake trout, fresh that I have caught from lake MI. Needless to say, it takes FOREVER with the smoker! Not any more!

I ordered the amnps today with the maverick 732 ( free shipping ) and a bunch of different pellets. I'm diving in head first. Only problem is I haven't decided which smoker, the mes 30 or 40.
Gander Mtn has the 30 for 199.99 and the 40 for 349.99 and with either one I get a $50 gift card at checkout. Need a new battery for the boat so the $50 card would be put to good use. Going tomorrow morning and buying one or the other. Suggestions?
In addition to salmon I always have a freezer with venison so i can see me trying more meats and definitely want to try some cheese.

Lastly, I figured out what in the heck a " fattie" is and I for sure will try one! No, I didn't Google it. Great forum with so much info it's mine boggling.

I wouldn't replace the little chief, I'd consider it more of an augmentation.  If you do the trick of using two sticks across the top of the smoker with the rack tower sitting on them and the inverted box it came in over the racks it is ideal for cold smoking when all you want is smoke without heat.  It is the best way to smoke cheese going, especially soft cheese.

Unless you are smoking on a really hot day you'll never have to worry about overheating the cheese.

Good idea lance. We had frost warnings last night and from what I've read this morning would have been a good time to do cheese. I'm gonna save the old smoker for that purpose if the amnps fits inside it? :)

And I agree with the folks above.  Don't replace the old smoker.  I just got my AMNPS today.  I'm seasoning as I type this.
 
Indy, not sure what is out of stock ? I was at the gander Mtn store today and they had 2 mes 40 and 4 of the 30's on the floor.

If money is no issue, go with the MES 40. If you do a lot of fishing and hunting you will appreciate the extra space. I love mine and frequently fill it...JJ
 
Have to agree w/ JJ on this one. Get the 40". I have never seen anyone say the 40" was to big . But there are a whole bunch that bought the 30" and then say they wish they had bought the 40" instead. 

  Whole packer brisket or whole racks of spares don't fit on the racks of the 30" but will fit fine on the 40"
 
Well I picked up the mes 40 today and seasoning it as I type this. No problem with the few simple parts to assemble. I'm amazed how fast it heats up to 275 and maintains temp really well.

First smoke will be this wknd, pork chops with a homemade rub that we've used for years on the grill.

I have alot of can salmon from last year and I do a stuffed pepper with salmon, rice, tomatoes, garlic etc....I think this would be a good experiment in the new smoker as well. :)

Sounds good! Don't forget the q view!

I make stuffed peppers in the smoker all the time. Never tried with salmon, I'd like it but not my boyfriend (he doesn't like salmon)! I do a bunch of them and vacuum seal for quick additions to meals (reheat on the grill).
