So about quarter of it is about 183... had to had more coals again so that’s about 20lbs of charcoal since 5... but most of it is tender as can be... might just rest it in foil and the tough stuff being to work as leftovers
 
Wow!Sounds like a lot of charcoal to me! I can cook a butt in my mini with barely over a chimney or a chimney and a half total! What kind of briquettes are you using btw? And keep the lid on and the door closed! I know you are peeking, huh?

And that’s why I foil. The difference in the bark is minimal to me and I’d rather have it cook faster and save the juice.
But this is the fun of learning to smoke big hunks of meat.

You can still foil it you know??
 
I didn’t peak at all before adding coals. I’m using Kingsford Original Blue... I wrapped it for the last hour.. it’s wrapping in foil and a blanket in a cooler.. it will still be good I’m sure of that but texture might be tough. Live and learn.. it was still fun! Just too much coals I think

Everyone loved it! It pulled mostly some spots were dry and crispy but most was super tender juicy and stringy! Now to sit in my chair with the Red Sox game on and figure out what i did right what I did wrong and what to do about it.. water pan was out of water again too...

Last time I check we were still held onto first place in the AL east. Whens that famous battle cry of sox fans going to start. Wait till next year, wait till next year. LGY..It's going to be an exciting year.

Hahaha we have the most wins in the majors! 2 more losses but we also have played more games and again Yankees are off tonight so another day to gain! JD just hit another HR to center so that’s 13 for him!
 
So the bark looks maybe a tad black. How does it taste?? Meat looks really nice. Nice color
The bark tasted fine not bitter at all. Wish the flavor was a bit more intense with the seasoning.. maybe next time spritz to keep it moist and less dark on the bark
