I bought a couple corned beef flats from Winn Dixie since I couldn't wait the time it takes to make my own. I desalinated it, rub them with the amazingribs rub, smoked them for about 3 hrs with cherry wood, let it rest for a couple hrs and then back into the steamer. It was about the same texture before the steamer and after, very tasteful and tender, perhaps could have been a little more tender but it was good as is.
Noticed that after I took it out of the steamer and started slicing in a minute or 2 it went dry again, not a issue but just an observation.
Bought some rye bread, sauerkraut and thousand island and made a Sammy that was really good. Next pastrami will be done by me all the way from either a flat or a whole brisket.
