First long cook on the OKJ Bronco

First overnight smoke I've done on the Bronco - a 10+ lb butt. Started at midnight with a near full charcoal basket and some hickory chunks and it ran well at around 225F till about 9:30am. It had hit the stall, and pit temps started dropping so I wrapped and finished in the oven. So I got 9 1/2 hours of solid 225F, but did have room for a bit more charcoal and probably could have gone 11 hours or more on one load - I'm happy with that. Flavor and moisture was great - might be hard to go back to the pellet grill for these again.

looks delicious ! my bronco was delivered monday , put it together tuesday and seasoned it spray canola oil and a full load of wally world charcoal and hickory chunks . got a pork shoulder out of the freezer tues. to christen it this weekend ... if it don't rain . my cover and inkbird IBT-6XS was delivered this morning and i've got a extra weber 18 inch grate for 4 pork shoulders i need to do next weekend .
