Hey everyone.  I'm in the process of my first ever smoke in my MES 30 and I've run into a bit of a problem.  I have some ribs going in the smoker and I'm using the AMNPS from Todd.  The pellets were burning great when I put them in (I made sure to blow them out), but when I just took the ribs out after 3 hours (to foil), both rows of pellets were completely burnt.  I'm guessing I filled it up to high and it jumped rows.  

My question is: will this ruin the taste of the ribs or effect anything with the last 3 hours?  Should I take the pellets out, empty, refill and relight or just leave it as is?  The smoke looked a little thick to me as I was cooking, but I didn't want to open the door and keep checking as that messes up the cooking times.  Any help you have would be great!

If the AMNPS smoked for most of those first three hours, I'd call it good to go. Three hours is a pretty good amount of smoke time for ribs anyway. Once in the foil, smoke is not going to do much for the meat.

Continue forward...should be fine as is.

I like a good bit of smoke so if I'm smoking something that will only get 2 - 3 hours of smoke I will usually light both ends and get double the smoke.

What kind of pellets did you use?
 
You guys were right, no problems at all.  They tasted delicious and my fiancee has green lighted further smoking as she loved it too.  Thanks for your help!

I used Billbo's rub, Chef Jimmy's Foiling Juice, and a baked beans recipe I saw on here.  I overcooked the ribs a bit, but overall for my first ever smoke, I think I did well.

Nice! If the soon to be wife approves and you liked 'em too, I'd say that's a good success.

Every smoke gets a little bit better, and easier. You learn how your rig likes to run, and how the smoke generation works best for your liking and the smoker, in specific. BTW, I only fill the AMNPS about 2/3 of the way up the sides and get a pretty steady burn that way.
