First custom rub

I will be trying out my new 2012 MES 30" tomorrow so I bought some spare ribs and country ribs for the inaugural MES smoke. I made my own rub since I am tired of store bought rubs being nothing but 80 percent salt. I am not sure it will taste good but this is what I did. (tasted good dry)

3 tbsp garlic powder
1/4 cup paprika
1.5 tsp regular chili powder
1/2 tsp cayenne pepper
1 tsp taragon
1.5 tsp chipotle chili powder
2 tbs Mrs Dash original no salt seasoning (had some ingredients I did not have but wanted)
1  tsp fine black pepper
1/2 cup brown sugar
2 tbs onion powder

Don't be too hard on me if you think it is going to taste bad. LOL

The ribs have been loving rubbed so wish me luck as I will be trying the 3/2/1 method

TTS , sounds decent , watch it to see if the sugar brown too much ,most of us use "Sugar in the Raw" (Turbinato).

Also , start a BBQ/SMOKING LOG... put recipe trials and tweeks , cooking proceedures , fuel , water ,etc. This will increase your abilities and help in your learning curve...

I like tarragon on fish, chicken and crab but never tried it in my rub.....hmmmmmmmm? I should do some experimenting...

80% Salt is Bad but No Salt is a problem as well...The meat will taste flat. Even 1 teaspoon Salt will help wake up the flavor...JJ

I agree but too many people who are going to eat this don't eat salt. I am hoping the lemon powder in Mrs Dash mix will help a tad and if it turns out flat, then whoever wants to can dip the rips into some BBQ sauce I have.
