So the weather was perfect for a cold smoke. High of 37 on Saturday. Got some blocks, cut them in half and on to the wire rack. I was concerned about air flow, so I cleaned out the burn pot and the auger system of any pellets. Kept the pellet bin door open and took the deflector plate out. Used two tubes of comp blend pellets. One tube on the grate next to the cheese, the other down below, leaned up against the burn pot. Got TONS of smoke. Somehow the lower tube got hot enough to burn a corner of a cheese. Left on for 2.5 - 3 hours. Still had plenty of pellets left so I threw a pot of pinto beans on. Hate wasting good smoke. I think, except for the overdone bits, it turned out well. We'll see in a few weeks.

Looks good
Got a few more weeks before cold smoking down here.
I use a kettle with Norm's (@normanaj) u bolt mod on a pellet tube to keep it above horizontal. and away from the product.
Just opened the first packages of cheese smoke last winter. As @Coreymacc they need to mellow. I prefer about 6 months

Just let it sit for a long time. Needs to mellow.

So I smoked it on Dec 20 and broke open a bag this past weekend. Turned out really good. That was about 7 weeks. Got about 3 more packages to try. Will wait at least 2 months between each (if I can).

Ya, 2 months at minimum. I have let them sit 6 plus months and it just keeps getting better. The smoke is a great preservative so the cheese pretty much won't mould. It just ages beautifully.
