  • 4 finely chopped garlic cloves
  • 1 jalapeno pepper, seeds removed and finely chopped
  • 1/2 cup fresh cilantro leaves and stems, finely chopped
  • Juice of 2 limes
  • Juice of 1 orange
  • 1/2 cup olive oil
  • 2 tbsp. white vinegar
  • 1 tsp. ground cumin
  • 1/2 tsp. granulated white sugar
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt

I seared each side for about 5 minutes, then moved the meat away from the coals and put a chunk of cherry and mesquite on the coals to smoke for about 30 minutes. This marinade was very good, and went well with a tad of smoke flavor.

Guacamole made with salt, pepper, siracha, and lime juice.

Me and my wife made this today for lunch, we used a Ninja food processor to make the marinade so it was thinner then the OP how ever it tasted amazing and still worked great for this recipe. I had never had flank steak before so I didnt know what to expect but it is a delicious cut, it was so juicy I didnt expect that and I smoked it for the 30 minutes with hickory on my old smokey. we sliced it thin and made home made pico that turned into salsa cause we processed it to much haha and homemade guacamole and ate it on flour tortillas. YUMMIE!
