First Butt - Pulled Pork

Decided to smoke a small boneless pork butt today to make some pulled pork for dinner. Thanks to everyone here for all the tips. I went with no foil and the "If your lookin', you ain't cookin'", method. It was about 3.5 pounds and took about 6.5 hours. It probably would have gone quicker, but I kept the temp around 225 instead of the mentioned 240. I pulled it at 195 IT thinking the carryover temp would get it to the 200 mark. Didn't quite make it that high, but it still turned out good. I think if I ever do a bigger one I will foil (for time and company) and push the temp all the way to 205 for tenderness and render the fat. If I do another small one, no foil for me. I like the bark.

That Butt looks beautiful...My last PP was done no foil. Great bark but took a long time. 5.5Lb Butt and 11.5 hours to 200*F IT at 225*F. I think I will play around with a smoke for 1/3 estimated time, Foil 1/3 and back in the smoker no foil 1/3. I like Bark but need the speed you get foiling...JJ
 
Looks good! I love bark too, but when I do 7-9lb butts, I simply don't have the time to wait them out. I'm a foiler and probably always will be.
