So I started my first brisket last night and am very anxious to check it out when I get home. I looked this morning and I think I was close, was beginning to develop a nice bark.

Is someone is tending the smoker while you're not there?

Like dawn said is someone home cause the firemen are big eaters. I know all those papers are thought to be for lighting your first fire but I'm sure some where on the first page right there in the middle of the first page in bold lettering are the word In big letters DO NOT LEAVE SMOKER UNATTENDED WHEN IN USE.
