Just finished my first brisket. Pleased with the results for my first try.

The ends fell apart, where the thicker middle stayed pretty much intact.
The small 6.25 lb brisket went into the MES at 4:30 am at 250 degrees.
I fell back asleep and woke up at 7:30 to find the IT at 179.
Surprised I dropped the temp to 225.
The IT hung out at 180 for another 2 hrs.
I then pulled and wrapped in foil and place back into the MES.
Within an hour the IT was at 190.
I then just shut off the MES and let it rest there in the foil for 50min.
Would like the entire slab to match the tenderness of the ends.
I welcome any and all suggestions.
The smoke finished about 3 hours faster than expected. I was mainly concerned about drying it out.
All in all, very tasty and a pretty good showing for my first attempt.

Looks yummy to me!
