The wife started a brine on the chicken this morning. I decided to give it a go on the Weber this evening.

The bird got rubbed down with:

2 tsp salt
1.5 tsp crack black pepper
2 tsp paprika
1 tsp dry mustard
1 tsp fresh rosemary, chopped
1/4 tsp garlic granules
1 tsp granulated lemon peel
1 tsp brown sugar
1/4 tsp cayenne


It went on the grill at 6:14...I'll update once finished..


The temp is hovering around 375..about how long should it take for a 2-3 lb bird?
 
I love chicken on the kettle!   It'll be @ 165 IT  2 hours or less if you maintain that temp.    Find some fire brick of sorts sometime and partition off the coals.   Oh...rotate the bird part way through.   Everyone should own a kettle!

Thanks for the tips! I want to get the little Weber charcoal basket thingy I saw somewhere..

I'll definitely rotate the bird..planning to do that in a couple minutes..
 
Pulled it off after an hour and 45 minutes. The thighs were reading 188 when I pulled it out. I loved how the thermometer slid in and out some smoothly! Just waiting on the baked potatoes then we're diving in!

Looks great!  I did the exact same last night, except removed the spine and quartered the chicken, instead of spatchcocking. At 325° to 350°, it took roughly 75 minutes. I used a chunk of apple wood for smoke. How about you?

Instead of using bricks or the weber tray, look at getting a Smokenator. It is fantastic and I used it to convert my Weber kettle into a full smoker. Just google it for size and price.
