You could "sacrifice" a small portion and fry it up in a pan. It won't taste exactly the same but it will be close. That way you can add more if it isn't hot enough for you.

I put it in the freezer yesterday. I got a MES and I will put the chubs in there this weekend. It is way easier to control the temp.

No more liquid smoke in my future. I will do the mailbox mod ASAP.

It must be done........

Well my first batch was a major succees.

I put it in the MES at 445 pm yesterday. 170

Added apple chips for 4 hours.

Then just let it go until the wireless thermometer alarm sounded. 154 IT

I was expecting 17 hours at the least. It went about 12.5.

I then put it in the freezer in a pan with ice for 2 hours. I took it out and put it on the counter for two more hours. Then I put it back in the fridge.

I finally broke one open and I was amazed by the flavor. Wow. The color was also perfect. It had a little film of fat on the outside. Just a little.

Thanks for all the help. I'm already thinking of what will be next. Lol
