Well it turned out Ok, my wife said it was great , but she is on my side , most of the time.
I used Chile's "Sweet and Savory Stuffing ", fantastic ( i added raisins though, and my Apple Pie Spice )
Had to debone the loins 1-,3.5lb, 1-,3lb
Rolled and rubbed , and in fridge for the night
Today in smoker at 225 degs , they were small so only took approx. 3 hours . Did an apple cider glaze for the last half hour
Finished with ( wife loves the Smashed -N- Smoked Taters ) and sweet kale salad
Not bad for first try . Next time i will pick up boneless. Easier to cut and roll i hope. Thanks for looking
