Looks good. I have not tried that part of the front leg but it does have sufficient fat and connective tissue to make a nice piece of meat. 6 hours is a Fast cook for that cut. Looks like a pretty big hot fire You may find a Low and Slow smoke will give a better result...JJ
Yeah the slow and low would've made a better piece of meat for sure, was having a lot of trouble getting the heat down where I wanted it, first try though, ill get better...
A nice small fire that is burning good and hot will help. That was the best suggestion I got when I first started. You want a nice small fire with a good clean burning flame you want your smoke to almost be translucent, it will look like a thin blue smoke to no smoke when you have it dialed in. The best thing you can do is keep practicing with it and you will find what it takes to get the temps where you want them.
