Cold out here about 26* and a bit of a wind.

I've never made these before but have wanted to try. I picked up up these nice looking short ribs. Dusted them up with some Big Bad Beef Rub and put them down at 12:30 eastern on some lump and hickory in an offset. Im planning on a 3-2-1 method with the foil in an aluminum pan with a little braising liquid. (labatts & sauce)

That braising liquid should make these fall off the bone tender! Looking good dude.

Looks good. Were you happy with the end results? If not what would you do different next time.
 
I was happy. As far as what I'll do the next time...do more ribs. Try to seal the braising pan up a bit better and use a little more liquid. They were very tasty and cooked perfect.
