Over the weekend I picked up some beef ribs from the grocery store. Apparently they hide the good stuff out back, because all they had on display were the tiny beef ribs cut into three ribs. Asked an associate and he came back with 4 massive Dino bones. It was a bit expensive (38 dollars) but well worth it. I trimmed some of the fat off but left a good amount on because I have read that brings flavor. Next time I will trim a bit more because we thought they were a bit to fatty. Seasoned with salt and pepper. Smoked for 3 hours, wrapped in foil for two, and smoked for another 35-40 minutes. Smoked with pecan and charcoal. I also did some light spritzing with apple juice.
