Did look at the pan one, and the cordon bleu. Will try the former sometime, looks good. Getting loins tender and juicy always a trick (why I’m anxious to try SV) but obviously yours pulled it off.

Actually haven’t smoked it yet, but made a fatty that’s kind of similar to your cordon Bleu and inspired by Chris‘ cordon bleu fatty, with some mods. Used smoked Gouda rather than swiss as some others here not as big a fan of Swiss as me. Had some ground turkey, thought maybe get a little more flavor than chicken. Played with some other spices too ... have to poke around my memory attic to recall what else I did.
