Cousin made Jambalaya Po-boys tonight, but it's not what you are thinking. Cut the pork and sausage up smaller than you would for a jambalaya and cook it like you would if you were cooking a jambalaya. Stop after you fry the meat and caramelize the onions. Eat that on Po-boy bread with Mayo and pepperjack cheese.


He also made White bean fritters...

I thought I snapped a pic. of my Po-boy, guess I forgot. I only ate half of it, will post a pic. when I eat the rest for lunch tomorrow...
