Did some firehouse chicken on the barrel grill. This grill just works so well. I really enjoyed this cook. Brined 24 hours in Pop's. Turned and basted every 6 minutes. At the hour mark ran out of sauce and temped at 175. I like to go 185 on legs and thighs and even up to 195. I just let them go another 10 and pulled. Dipped in white sauce. These where so good!

Sorry not sure what you mean by White sauce ?

Bib Bob Gibson's has been serving chicken for years with a white sauce and it's become world famous. I believe it's been voted the best in the world a couple of times. It's quite a fascinating history. This is the main page but I'm sure the story behind the white sauce would have to be on here somewhere.

The chicken looks great, but I've never had Alabama white sauce. Duke's, makers of the world's best mayonnaise:emoji_wink:, introduced a line of regional BBQ sauces about a year ago and one is Alabama white sauce. I've been curious, but not curious enough to try it. That may all change now that I can make it myself using a proven recipe.

Brian and Robert for the links for the white sauce. That is new to me , i will see if i can find a bottle around here in some of the specialty stores or i will just have to make it my self.
Always up for new tastes on the the dinner plates, Mona is always a little scared at what i cook sometimes ...Most times she is ok with it .....but not every time, lol

Brian that sounds great I may have to give it a try, I don't think the crew will have any problem eating it. 195°F
that is what I cook most poultry too.

It just gets so tender and juicy! I do always brine chicken.
