I am finishing some design work on my smoke house and have a question.  What is a good product to use for the food grates.  I can weld (learning to), so I don't mind constructing it myself.  I just don't know exactly what type of metal to use and what to really stay away from.  Any suggestions would be greatly appreciated and if you know sources that would be great too.  I live in the Seattle area so getting my hands on materials won't be too hard.

well if you can afford a non corrosive metal like Stainless Steel you could get away with 304 probably, or even an aluminum as far as other types of ferrous metal they would rust, but I am sure some folks use it
 
Depending on the size of the interior, you may be able to just buy ss grates. Some of the big vertical smokers have pretty wide grates in them.
 
You can use almost anything of course. Stainless steel is the easiest to clean up with least maintenance, but any steel will work. It should be "seasoned" (lubed in cooking oil and heated) to prevent rusting. I would stay away from coated steels just in case. Quickest solution to swing by a hardware or box store and find a grill grate that will work, most are stainless.
