So I finally got all of it together and seasoned her well! I am working on my third smoke in it and it seems to work great, holds 235-245 degrees steady for hours. I kind of got the idea from a member on here that had built one similar, I figured what the heck I can build one like that! So here it is, 5 cooking racks and one at the bottom for the water pan! I use to work at a steel laser cutting shop so I had a friend of mine cut me some pieces out of .060 alum to line the inside of the smoker! Worked quite well, use fire bricks at the bottom to keep the flame from straying too far away from the burner and to contain the heat! I just ordered the Smoke Daddy smoke generator for it so I can do cheese and sausage!

Yeah, I know! I wanted to be able to 20 pounds or so of snack sticks and summer sausage. That is the main reason I built it, I can only fit 9 pounds of sticks on my Brinkmanns offset smoker and want to be able to do all of it in one smoke plus It is hard to hold the low temps in the offset! Thanks!
