Well, its been a very long time but my build is almost complete. Just need to put some vents in the side, and temp gauges in the doors, and should be good to go. Ive already put some heat into it to check for leaks, and it didnt disappoint. Now I just have to find a way to control it somehow, but the venting should help. Since I separated it into 2 chambers (side by side), should I build a firebox on one side of it for cold smoking? Any ideas? Or should I keep it the way it is, and have 2 different heat sources? Ex. Charcoal and electric. Any Ideas weould be greatly welcomed.

What if you put a wood/charcoal on one side and left it electric on the other? Then maybe plumb it so if you want to you can let the smoke go across to the other side as well. This would give you the consistency of electric heat on one side while smoking the meat. This option would also give you the ability to smoke with "pure wood" on the other. Just an idea off the top of my head. It may not work though, I'm just brain storming. Looks good by the way!  Also, what if you made one side your firebox? This could give your smoker the versatility of also being a wood open flame grill/smoker/electric. Like I said, just brain storming. You asked for ideas... or you could leave it alone and enjoy it the way it is.

Thank you so much for that! Yes I did consider plumbing it across, just have to figure out a way to make sure it has a good seal when closed. I really appreciate the thought though, it makes me realize im not crazy for thinking the same thing!

One thing I have thought of for sealing on a flat surface is to have a flat piece of metal 1/8" thick or so hinged across the top. Have this on a lever so that when you twist the handle from the outside, it opens this flapper on the inside.

Another option would be to make a sliding damper. Also have this attached to a handle that extends to the outside. When you pull the handle it slides the damper towards you opening the flow. Push it and it closes the gap. This would be simple and reliable.

The only problem would be welding to stainless... unless you have a tig.

I suppose you could screw and seal the "tracks" that the damper will slide in to the wall and simply slide the sheet of metal in to create your damper.

I thought about the damper idea before. I think it will be the easiest solution. And if it doesnt work, at least I have the hole(s) to use your flapper suggestion. You are a very good brainstormer. Thank you. You're hired.
