I get tickled silly when I buy a rack of ribs that is not all crooked and "messed up".
I don't know about y'all but I watch a mess of BBQ competition shows and see all these turn-in boxes with beautiful uniform, straight ribs in them. I quit buying Smithfield a long time ago, because the yield was typically awful. bad cuts, crooked bones, and not to mention the ownership of the company. I watch the sale papers and frequent W/D for ribs. When they are BOGO it can be Smithfield or Swift. well this time it was Swift. St Louis cut is my go-to. done on the kettle, with Cowboy Briquettes, SNS with a reservoir, and use a cake pan of water on the cooking grate. 4 1/2 ours, no wrap, and a finishing glaze of Sweet Baby Rays with Chipotle. Kettle ran 265 through the whole cook. Finally a batch I could knife cut cleanly hat came out with perfect "bite through". Made for good eating for the race and football Saturday.
