Few questions before doing some mods to my ECB

Going to mod out my ECB this weekend. 2 questions before I do, just trying to understand the "why":

1. I see most recommend a grate inside the charcoal pan. What is the reasoning/benefit behind keeping the charcoal off the bottom of the pan?

2. I see most recommend mounting the legs on the outside of the unit. What is the reasoning/benefit to doing this?
