In-laws insisted on having Turkey day dinner at their homestead and insisted on cooking the bird! Don't know how I'm going to keep myself occupied not having to tend (aka drinking beer) over the smoker a day tomorrow. I do have to make the rolls, but that's a simple process and only involves a few steps! Guess I'll just drool over Q-view all day until dinner.

I do have a 6 pound bone on breast thawing as there won't be any leftovers from the in-laws. So Friday or Saturday will be my turkey day!

So you are complaining that someone else is making you a great turkey dinner and you don't get to cook, Case? You must be a smoker.

For at least 20 years we do three 18-20 lb fresh turkeys each Thanksgiving; one for soup, one for Turkey Day, and another on the weekend we can use any way we wish.  We vacseal the meat and stick it in the freezer in 1 lb packages.  That meat and the 5-6 gallons of soup stock we make from the bones and stick in the freezer usually lasts us until the spring.  The only time we don't do three turkeys is when we visit family or friends and leave town to visit.  When we do I end up missing the after Thanksgiving sales so there's no turkeys in the freezer either.  I start seriously missing the soup stock, leftover meat, and the cheap turkey about January.

There was some issue last year where there was actually a frozen turkey shortage that ended up impacting availability of fresh birds because whatever was available got bought up quickly.  That doesn't appear to be the issue at all this year.  Lots of 18-21 lb'ers.  Yum!

We decided to stay home this year just so we can have our own traditional Thanksgiving.  One soup turkey is already smoked and in the freezer.  One is brining.  And I'll pick up the third on sale Friday when the price is usually cut in half.

BTW, my brining bag busted a seam sometime during the night.  That made for an interesting cleanup in the cooler this morning.

Yes this is the first time in 20+ years that I am not the one cooking/smoking the turkey. I will miss the smoke and the quality control!!! Oh well at least I know the rolls will be Great!!

I'm always nice! Never a problem with drinks at the in-laws, always top shelf!

Smoke away!!!

So we are taking a few items. My rolls, Portuguese sweet rolls, my wife made two apple pies, and we are making a Brussel sprout dish there.

Also simmering my turkey brine for the breast I have for us to smoke. Probably smoke that Saturday.

Smoke away!!!

I hope you guys have a great turkey day Case. Kick back and enjoy. I didn't push to smoke a turkey this year so my pop is cooking a ham. That leaves me free to get liquored up and help my sis celebrate her birthday. Tell the wifey those are some beautiful pies! Think I'll go have a glass of fireball and pretend it's apple pie!
