Favorite things to do with leftover pulled pork?

I gotta say I love some pulled pork as much as the next guy but I'm kinda burnt out on pp sammies. I have two 11lb shoulders on the smoker right now to eat on this upcoming week and sandwiches didn't even make the cut this time when the menu was made lol. I think I'm definitely liking the pork in other dishes here lately for sure. My question is, what's everyone's favorite use of the leftovers? Some of ours are pp tacos with red cabbage and Siracha aioli, smoked pork pot pie, which is heaven in a pie crust, and open faced pp sandwiches with mashed potatoes and all smothered in gravy. The open faced is a play on one of my favorite dishes my Grandmother made me as a kid.
 
Bake a great big ol baked tater and load it up with PP and any thing else you like,hard to beat for left overs

That's a good one, we have used that one around here for sure. Also makes for a reasonably quick meal. Nuke a tater, heat some pork, and presto, dinner is served!
 
Atomic Buffalo Turds! AKA: ABT's.
1 dozen fresh Jalapenos (for starters)
24 slices of bacon
cream cheese
pulled pork

Split each jalapeno lengthwise & remove seeds (leave the stem cap on) and fill with cream cheese and top with pulled pork. (less cream cheese, more pork!) Wrap each half with a slice of bacon. Secure bacon with toothpicks and place on a wire rack.
Hot smoke until the bacon is done & crispy.
Don't forget to remove the toothpicks before eating! ;)

These beat the hell out of grilled jalapeno poppers cooked in those cute little vertical stands with their measly little piece of bacon pinned over the end. :P

Tacos, Burritos, Nachos, Chile, Machaca, Enchiladas

Transform into smoked carnitas! Pizza is another option not listed yet.
Those are both good. Funny you mentioned pizza, that’s one of the new ones we are trying next week. Gonna go Pp, mushrooms, and baby spinach.

Those sound great, never tried em with pp.
Omelettes and/or tacos...great use of leftovers, not just PP.
omelette is another good one I haven’t thought of
I like it on Mac and Cheese :) Or just adding it into any dish that calls for pork. :)

PP hash! I made this one time because I had the same problem getting tired of PP on a plate or with sandwiches.

I chopped the PP, mixed it with shredded potatoes, grated onion and BBQ rub. I also put a little Lexington Dip sauce with it. I griddled on the Flat Top Grill with butter, but I have made it in a cash iron pan before too.
I found out the hard way not to use a KC style sauce because the sugar will burn before you get it crispy.

It makes really good chili!
I use PP, brisket, Andouille, & bacon in my chili!
Can't beat it!
But just PP would be good too, I like to have a lot of meat in the chili so you get a mouthful with each bite.

Definitely gonna put this on the list.
 
We love to do the carnitas route along with nachos. The smoked pork really works well in any kind of Mexican dish. We use the carnitas fo make burritos. It's also awesome mixed into my wife's killer barbecued beans.

Good ideas but don't forget how well PP holds up so vac seal a few pouches and freeze. Nothing makes it past 3 days in the fridge at my house.

I have learned this with brisket..11.5 pound brisket..Monday..maybe 3 slices left, enough for one person to have for dinner.. shoulda vac sealed some right away!

SOP here is to vacseal half of a big smoke just coming off the smoker. Seals in freshness in my mind. Totally love the convenience too. Pop out of the freezer and reheat and it's like BAM freshly smoked. There are a few other guys like me that swear it actually improves the flavor.
