Anyone willing to share their absolute favorite dry/semi-dry sausage recipe? Trying to decide on what type of sausage to make next. I am just starting down the road of making dry or semi-dry sausages with starter cultures. I have F-LC and B-LC-007 so any recipe using those cultures would be a bonus. Thanks in advance.
They are all delicious, but the drying is the tricky part. So what are your ambient conditions? Humidity and temperature. Or do you have a drying chamber?
Cannot give you my favorite recipe as it is guarded by the family who shared it with me. That said go Finocchiona style with fennel and add dry red wine and red Chile. As a semi or dried sausage that is my favorite.
