So last week I smoked my 1st pork shoulder, however in that thread there were some changes I wanted to make. So yesterday for father's day I was at it again with a pork shoulder just shy of 7lbs on the smoker again at 6:30AM. This time I corrected the few things I wanted to change on my 1st smoke (see above link). 1st change was I left in the smoker till internal temp reached 165, then I transferred to a pan w/ foil. 2nd change was letting it cook to 208, once at 208, I pulled foil off top and put back in the smoker for another hour adding no more fuel to the smoker and just let the fire burn down. These 2 changes did 2 things from my 1st smoke. #1 it created more of a bark which I love! #2 it was more tender and easier to pull apart than my 1st smoke, the bone fell just about right out. It came out unbelievable and the company I had over for Fathers day were BLOWN away. I was really impressed with the results.
