Hey guys,

It’s been a while since I’ve posted and I was hoping for some suggestions? Next Sunday evening the Chargers play the Steelers. I’m the Chargers fan and my wife is a Steelers fan. We thought we would turn it into a fun celebration like the Super Bowl for two. I’m going to smoke something but haven’t decided exactly what. The wife is going to make some of her awesome mac n cheese. I’m leaning towards a Tri Tip for the meat. I’d love to hear suggestions for other things that you guys think would go well with these dishes? I don’t want it to be too complicated but I don’t mind putting in some effort as long as I can get everything done by game time. Thanks in advance.

Pork shots or moinks are always good appetizers.

I would lean towards all apps for the meal. cook 4 or 5 apps on your smoker take 2-3 hours tops and you an enjoy game day. you could serve buffet style. Your favorite abt variation, moink balls, etc. there are million and one recipes here and Smoking-Meat.com. i would keep the cooking simple so you can enjoy her and that game more.

Good Luck,
phatbac (Aaron)

Apps all the way. Though I'm inclined to claim Mac N cheese is an app.

I suggest making Sin Dip...if you want a cheese overload for a dip.

The only reason that I wasn't looking at a bunch of apps was the prep time involved. I recall how much time it took me to create some pig shots. They were AWESOME! But it did take a long time to assemble them. It's certainly a consideration. Now, the suggestion about burnt ends. I am going to take you up on that. I have a point in the freezer that is already cooked and I think that this is the perfect solution for using that. I will thaw it out and then put it on the smoker with whatever we cook. My wife seems to really want that Tri Tip. I am thinking about getting some King's Hawaiian rolls to use to make sliders out of the Tri Tip if I do that. Then the burnt ends and I need something pork or chicken. The mac n cheese is a definite. My wife is adamant about that one. If we could find some decent avocados I would make some guac but they have been worthless almost all year long. I could do some bacon wrapped chicken thighs stuffed with cream cheese. Those were really awesome when I made those this Summer. It may come down to something simple like wings. We will just have to see. If any of you have other suggestions then please feel free to toss them into the ring. It's been a while since I did a really big smoke, so I like that this has me motivated again.

Cranberry ABTs, I gotta sell that one since as far as I know, I was the only one to try it. ;)

Can always do all the fixings for gameday tacos/nachoes too. Which really just requires the meat to be prepped before last minute. Burnt ends can go in tacos I swear. ..

Here are some photos from today’s family bowl. It’s turned into a great game but the food is already a winner.

Not sure how I got double posts of the pictures. Sorry about that. The menu was as follows.

Brisket burnt ends
Tri Tip sliders on King’s Hawaiian rolls
Bacon wrapped chicken thighs stuffed with cream cheese and jalapeños.
Mac n cheese my wife’s awesome recipe
Guacamole and chips

SO FULL :)

Thanks for the like Aaron. By far the best thing on the menu were the burnt ends. I can't even begin to describe how delicious they were. Like cubes of beef butter. They exploded with flavor every time you took a bite of one. I will never slice a point again. Now I am going to be obsessed with trying different kinds of burnt ends. Loved the evening. It was fun to do a big smoke and to watch a game that we were both into. My wife doesn't generally get into too many games other than the Steelers and Ohio State. So it was nice to share something even if her guys did eventually lose.

Thanks Tom, I was really happy with everything. The chicken did hang just a bit too long in the pit but it was still tasty. The bacon was just a bit crispier than I had intended. That's what happens when you start smoking stuff in the dark I suppose lol. I'm looking forward to getting my smoker more workouts soon.

You absolutely must serve ersome kind of roasted Squeelers (pork) so you can tell her they are cooked :)
