Eye of round.

Stopped at the store on the way home after seeing my dad. And they had eye of round roast on sale for 2.99 a pound. I grabbed what they had left on the shelf. 6 packs at around 2-3 pounds each. I'm using 3 of them. And using SmokinAl SmokinAl 's brine/cure recipe.

Brine ready and meat put in. Then I realized I forgot to inject! Took them back out of the brine. And injected as much as I could into each one.

I'm thinking that a 2 week soak should be enough.
 
Sounds like a good batch of meat you have going. I just pulled out my last batch of pastrami I made from knuckle. I am going to definitely use eye of round next time too.
 
Oh that’s gonna be good, decent price on the eye round. It’s been creeping in price here, right now it’s $3.60 lb.

Last year I bought it at $1.97lb, it all went to jerky, wish I had more to do some pastrami.
 
The wife is bugging me to make jerky with the rest of it. I'm pushing back, a little. Because I want to do some dried beef with the other 3 packs.

$2.99 is my "Buy At" Price. That's the Low it stops at around here.
Sometimes they are Whole Roasts about 6 pounds, and sometimes they're packed in Halves @ about 3 pounds, like you got there.
I like them for Dried Beef & to put in my SV @ 132° for 21 hours, for Hot Roast Beef Sammies & such.

Last time I did eye round into pastrami , I sliced some ( after smoking ) and further dried into jerky . It's pretty good .

That's a great price on eye round. I've been watching prices as I need to make more jerky. Right now eye round here is $8.99/#. Ouch!

Just a week ago it was over 5.00 here. And that wasn't very good looking eye round either. These required zero trimming.
 
Great price on eye. $3.50 is my jump point.
Dried beef is my preference and my 2 small eyes in the freezer will go for that delicacy once I get the chance
