Eye of round wraps

    Eye of round with bell peppers, onion, pepper jack, some of my vinegar based sauce and some "hog callin" rub. Been on the WSM for about an hour.

    Well????? whatcha think on the outcome? I'm personally not a fan of the Eye of Round unless making jerky. Not being a snob, just no marbling in there and can be tough as hell. I'm OK with it rare & sliced razor thin for French Dips, but at work when asked to cook it I always referred to it as 'ass meat'.....Willie

    It was great! I pounded it out with the ol' meat hammer. It was extremly tender. It will definitely be on my list of things to cook agian.
