I'm new to this jerky making. Santa brought me a 10-tray Cabelas dehydrator. I bought two of the jerky kits from Cabelas and they are for 5# batches. I was afraid of ruining 5# of meat so I divvied it up. One pound of bison and one pound of 96% lean ground beef.

My scale measures in Ounces and also does decimal. I was able to put a small bowl on and the tare it. Dumped the packs in and they did read 2 oz. Spooned out enough ( .4oz ) for each pound of meat.

Worked great on the ground bison and ground beef. Pix attached.

Got my confidence up so I'm trying a batch today of the sliced top round. It says add just a little water to the mix, then coat the slices evenly and marinade in a ziplock for 12 hrs or so. I'm not sure how to tell if it got even coverage or not. It doesn't look like the liquid marinades that I'm used to doing for other meats.

Will I be able to see some reaction going on with the meat?
