How I got my smoker to have even temps.. NO TEMP SWING ..... Controller
temperature set to 275... I do not want the element to turn off..... I want
to totally control it through the add-on dimmer/SCR...
For the test. exhaust wide open... MB mod normal... 3 holes open, which is the
normal way I use it... Good clean smoke needs good air flow...
..cold start.. 100% current to the heating element to preheat the thermal mass
of the smoker....
... After 41 minutes finally reached ~270 ish....
.. Turned the dimmer down to ~40%... I do have a gauge to read the voltage...
.. It's in the "things to do" box...
... 31 min cooled to 192....
