For New Years, I thought I would try to do something with our traditional hog jowl. Burnt ends seemed like a good idea. Found some jowl, trimmed a lot of the excess fat, added some rub and put in the smoker. Ran around 235 for about 5 hours. Man they were looking good. Took out Of the smoker and placed in a pan and put back in the heat to render a little more. This is where I kind of lost track of time. It was about another hour and a half before I realized what I had done and when I lifted the pan it was almost weightless. I quickly ripped`of the foil and observed a pile of black pork rinds. Well, I did do something different, we didn’t have hog jowl for new years

I lose track of time a lot... especially when I take afternoon naps... or evening naps.. or morning naps... I happens to the best of us...
