Hello!

My name is Phil Everett and I'm 21 years old from Mogadore, Ohio.  I started smoking meat last year after I had been working at a butcher shop for a year.  I became interested in all the different cuts of meat and how they can be cooked, so I just decided one day to build a smoker out of an oil drum.  I had learned to weld in a sculpture class so I had some skill in that area and had my buddy help me with the more complicated stuff.  The end product was a super hillbilly off set smoker that has gotten to the point to where it barely cooks...  So I decided to build a UDS and it is almost done! Please give me advice on how to use the UDS and everything about smoking. I am eating it up right now! I study art history at Kent State and I am a huge Green Bay Packers fan. I grow my own peppers and started making hot sauce.
