Got this whisk as a promo. Works pretty good and easy to clean.

indeed. It's a Danish-whisk variant. I find that the Danish one works perfectly with a poolish but when I use it with a "regular" dough, I still have to scrape the dough off it. Not perfect.
 
OK I may have to try one. A traditional danish whisk is a pain to clean around the eye. Considered cutting it out
 
I had put the dough into my couche to keep it more "round" is one reason why it's "high".

Overall hydration is 94% so it's possible that it needed more (being winter/dry air here) but I'm also considering other factors.
 
I have had these ones for years. (Dutch Wisks) I just ended up using it upside down. Old wooden spoon does the same thing. Old english baker told me not to waist money on new toys and just use wooded spoon upside down. Brings the dough together just fine and very little to clean up.

Ah that explains the height baking in a rolled form.

which I didn't want/wanted "sandwich" style for slicing for sandwiches. Although I absolutely love the crust flavour, it is a bit much to try to bite through "a bun" type sandwich.

I've got a couple of those. They work pretty well. Minimal dough stickage.
 
Just made some dog biskets using the end of mine. Works perfect and very little clean up.
